General/ Plan Discrepancies


1. The plans were not approved. Please provide revised plans addressing the below noted comments.


2. The specification sheets did not correspond with the plans with regard to the sinks. Please indicate which sinks are going to be installed and their location. For example: a food preparation sink was proposed in the back of house. Specifications show a standing unit while views show an inset sink.


Food Preparation/ Handling


1. Discuss how money is to be exchanged with service staff. It appears that the handwash is readily accessible to food preparation staff but not to staff in the bar area. Handwash stations must be readily accessible.

1. Provide a sanitation listed convection oven. No sanitation listing was observed on the specification sheets.

1. Station the warewash machine in association with two drain boards, use of the food preparation sink is unacceptable. The machine can be staged under the warewash drain board.
