1. The plans are not approved. Provide revisions addressing the items noted below.
2. Please indicate if any re-heating is to occur on site.
3. Please indicate if pour-over coffee will be provided and where.
4. Provide proof of permitting for the central kitchen.
Plumbing

1. The following fixtures must be directed to a floor sink(s) with an air gap:
• Food preparation sinks
• Utility and warewash sinks
• Dishwashing machine
• Rinsers, drip pans, condensate lines, other food service equipment
Lighting
[§114252 CRFC-Lighting]
1. Provide shatter proof lighting in the open food handling areas.
Notes: Grease trap is in the parking lot.
