Protection from Contamination

1. Relocate the cold press machine away from the janitorial sink and install in a location adjacent to handwashing.


2. Provide a splash guard or separation of at least 2 feet between warewash and food preparation sinks. Is item # 27 A for this purpose?


3. Eliminate the sprayer on the rinse sink located in the service bar.



Lighting

1. Provide shatterproof lighting over open food processing areas. No exposed ducting, wiring or other overhead sources of contamination should be over open food processing areas.



Finishes


[§114268 CRFC- Floors]


1. Provide a 4" integral coved base of the same flooring material as the floor in the Juice Bar (behind equipment) and Back Kitchen.


2. Provide flooring and coved base material for the restroom.



Storage

1. Provide designated personal belongings storage.


2. Provide a chemical storage cabinet.
