Corrections required:
1.) Provide supplemental calculation showing water usage (in gallons per day) for the new coffee shop area.

3.) Address the following comments issued by the Santa Cruz County Sanitation District Environmental Compliance Unit: The Sanitation District cannot approve the plans as submitted. In order to approve the plans, the utility sink, pitcher rinser, and hand sink must be routed through a minimum 70 lb grease trap. These requirements were discussed with Nia Lewis of Fuse Architects, Inc. on January 8, 2020. Please submit revised plans that include a plumbing diagram to show the proper fixtures routed to the grease trap. Food Service Facility Operations /Commercial kitchens: - All food service operations in the County of Santa Cruz are required to have a grease interceptor or trap to remove fats, oils, and grease from sanitary sewer water emanating from the kitchen prior to discharge.
- All sinks including mop sinks, floor sinks and floor drains must be routed through a grease interceptor/trap with the exception of bathroom drains and hand washing sinks (Some hand washing sinks will be required to be connected to the interceptor).
- Floor drains must be installed with screens that prevent solids from blocking the facility’s pipes and from entering the sanitary sewer.
- A dishwasher is not permitted unless a minimum exterior 350-gallon grease interceptor is installed.
- All grease traps will meet the Santa Cruz County Design Criteria. Grease trap sizing specifications are detailed in the design criteria. See the design criteria at http://www.dpw.co.santa-cruz.ca.us/environment.htm
- Grease additives or enzyme use in grease traps or lines, are not permitted unless they have been approved for use by the District.
- Garbage disposals are not allowed in commercial buildings.
- All lids to grease interceptor compartments and samples boxes must be kept clear and accessible at all time. No landscaping is permitted directly over the grease interceptor but may be present around the interceptor. If the proposed grease interceptor is set in landscaped areas, the lids must be set in concrete and raised above the ground surface to prevent sinking and prevent the lids from becoming covered with any eroded soil.
- All trash enclosures are required to have overhead coverage. If the trash enclosure has a drain it must be connected to the sanitary sewer. If an exterior grease interceptor is required, the drain must be routed through the grease interceptor. Drains routed to the sanitary sewer must be properly enclosed and covered to prevent storm water from entering the sanitary sewer. Storm drains are NOT permitted in trash bin enclosures.
The Sanitation District must be allowed to review plans for the interceptor/grease trap(s) and to inspect the installation. Any questions regarding these criteria should be directed to the Santa Cruz County Sanitation District Environmental Compliance Unit at (831) 477-3907.\
A hold will be placed on this permit: 1. A hold will be placed on this permit for completion of an inspection of the fixture count and grease trap.
Backflow prevention device may be required: Anti-backflow check and/or sewer relief valves shall be provided in all service connections in which the finished floor elevation is less than 12 in. above the next upstream manhole.
Resubmittal: It is anticipated that revisions and additions will necessitate the submittal of a revised set of plans, which may result in further review, comment, and/or different or additional conditions. Please submit any revised plans directly to the Planning Department; the process for tracking your re-submittal begins there, and it is important that they receive the documents first. Leaving materials with Public Works may result in delays in processing and/or approvals.

The Sanitation District cannot approve the plans as submitted. In order to approve the plans, equipment # one, two and eight; the utility sink, pitcher rinser, and hand sink must be routed through the 70 lb Endura grease trap. Please identify plumbing lines as grease waste or sanitary sewer. Also, grease trap should be in ground/flush with grade to meet the Environmental Health requirements of having an air gap. Installing the trap in ground means you would be routing the floor sink/floor drain through the trap (as is specified in our comments notes). Please re- submit revised plans for further review.
